Curated with Mill Scale Culinary and Chef Jesse Griffiths—the visionary founder of Michelin Green Star restaurant Dai Due and a Mill Scale Ambassador—this multi-course experience showcases locally sourced ingredients and beef raised on Still Austin spent grain and Central Texas grasses, in partnership with Double J Ranch.

Passed: Beef tartare with horseradish and frilly mustard on marrow toast
1st Course: Persimmon, apple and blue cheese salad with chiles, machacado and apple vinaigrette
Main Course: Grilled miso-marinated chuck eye, ribeye and strip steaks, Coffee-cured confit beef ribs, Beef and black garlic sausages, Coal-roasted sweet potatoes, Grilled pickled mushrooms

It’s well known that Still Austin uses 100% Texas grains to make our spirits. What you may not know is that, after we’ve finished distilling those spirits, we send our spent grains to local ranchers and farmers. During their life cycles, the free-roaming livestock on these farms and ranches will only ever consume Still Austin spent grains and native Texas grasses. This “farm-to-still-to-farm” approach results in a complete circle of sustainability—and some of the finest beef in the country. The dinner will showcase how Still Austin’s spent grains are sent back to Texas ranchers, where they help to produce healthier animals. We invite you to a multi-course ‘whole steer’ dinner of live fire prepared dishes by Mill Scale Ambassador Jesse Griffiths of Dai Due, as well as accompanying Still Austin beverage pairings.
